I’m Bethany! Nice to meet ‘chya.
2015 was the year that I discovered the healing properties of a plant-based lifestyle and it’s ability to prevent, reverse, and/or treat the 15 leading causes of death (non-communicable diseases such as heart disease, cancer, and type two diabetes) in the United States. This was also the year I became an ethical vegan after watching the documentary Earthlings. Since then, I have fallen in love with plant-based food, re-creating my favorite vegan “junk” dishes, and all things related to nutrition!
I love it so much, that after I finish my Bachelor of Arts in Criminal Justice from the University of Alaska Fairbanks in 2018, I’ve decided to go back to school to obtain a Bachelor of Science in Nutrition & Dietetics! I aspire to be a Registered Dietitian specializing in plant-based nutrition one day.
In addition to studying and/or doing homework, in my free time I like to make delicious plant-based recipes, cook vegan comfort food for my friends/family, research nutrition, spend an unhealthy amount of time admiring my handsome son (he’s a papillon chihuahua!), reminiscing my figure skating days, and spend time with my adorable niece!
