Healthy Chocolate Chip Muffins! (Vegan, Oil-free!)

These chocolate chip muffins are:
– Vegan (duh!)
– High carb low fat
– Oil free

– 2 cups flour
– 4-6 tablespoons sugar
– 2.5 tablespoons baking powder
– 1 tsp cinnamon
– 1 cup unsweetened plant milk (I used unsweetened Milkadamia)
– 1 tsp vanilla extract
– 1 tsp apple cider vinegar
– 3.9 ounces (1 individual container) of unsweetened apple sauce
– a few handfuls of dairy free/oil free chocolate chips (I used the sprouts brand, but I also like the enjoy life brand.)

– Preheat oven to 425 F, then lower back down to 350 F
– Mix together dry ingredients (flour, sugar, baking powder, cinnamon)
– Mix together the ACV & plant milk (let it sit a few minutes), and then mix in the rest of the wet ingredients (vanilla extract, apple sauce)
– Pour the wet ingredients (along with a few handfuls of the chocolate chips) into the dry ingredients and slowly mix together
– Ladle the batter into silicone liners
– Cook for 25 minutes

– Make sure not to over mix the batter! Mix right until the ingredients are well incorporated. Little bubbles of flour are okay.
– Since these are oil free, they cook BEST in silicone liners. They WILL stick to paper liners. I got mine from Walmart.
