Caramelized onion/mushroom veggie sandwich with roasted beet & garlic hummus (Oil-free)

This was probably the most delicious sandwich I’ve ever had. It was definitely the prettiest.

The first thing I did was make the roasted beet & garlic hummus. You can find that recipe here.

Ingredients for the sandwich:

  • Dave’s killer bread (toasted)
  • Roasted beet & garlic hummus
  • Sliced cucumbers
  • Romaine lettuce
  • Sliced tomato
  • Sliced pickles
  • Sliced green pepper (you can use any color)
  • Shredded carrot
  • Shredded cabbage
  • Caramelized onions
  • Caramelized mushrooms

Begin caramelizing your sliced onions and sliced mushrooms by throwing them on the stove on medium heat. Add in some (oil-free) veggie stock, some minced garlic, and 2-3 tablespoons of low sodium soy sauce. Cook until the onions and mushrooms darken in color. This should take about 5 minutes.

Throw your bread in the toaster while your onions and mushrooms are still cooking. Then assemble your sandwich, and viola!
